How to preserve flowers for wedding cakes?

I'll assume you mean flowers made of gum paste or fondant and not frosting. Moisture is your enemy, place flowers on a folded paper towel and slide into a zip-top baggie. Draw the zip to almost closed to where you can fit a straw in the opening, suck the air from the baggie, pull the straw and pinch the baggie closed quickly. Do not place more then one cluster/ flower in a baggie at a time. They are ready for the freezer.
